Super Easy Mixed Bean Salad

 

Ingredients:

You can use fresh, canned or dried whichever is easier or preferable.*

1 – (15 oz. can) chickpeas, drained and rinsed
1 – (15 oz. can) kidney beans, drained and rinsed
1 – (15 oz. can) butter beans drained and rinsed
1 – (15 oz. can) green beans, drained
1 – (15 oz. can) yellow wax beans (bush beans),drained 
2 celery ribs small dice
½ red bell pepper, small dice
½ green bell pepper, small dice
¾ cup red onion, fine dice

Dressing Ingredients: 

1 Lemon freshly squeezed
1 Tsp olive oil
3 Tbsp Honey
1 Tsp garlic powder
1 Tsp onion powder
Pinch of chilli flakes (optional)
Sea salt & Pepper to taste (optional) 

Optional Garnish/Toppings:

Chopped flat leaf parsley


Method
Mix all dressing ingredients together in a bowl and pour over the bean salad.
