Avocado Spinach & Lime Soup

 

Raw, gluten free and plant based

Ingredients:

1 avocado

2 cups spinach

cucumber

1 celery stalk

1 tbsp lime juice 

1/2 cup coriander (fresh cilantro)

2 tsp cumin

1 tsp ground coriander

1 tsp onion powder

1/2 tsp salt

1 tsp tamari

1 cup water if wanting warm soup to use hot water  

**Cashew cream, (optional) chopped chives, sundried tomatoes, and spring onions to garnish.

Method

Blend all ingredients, except the garnishes in a high-speed blender until smooth.

Transfer to a serving bowl and garnish with sour cream, chopped chives, a little slice of avocado, spring onions & finely diced sundried tomatoes.

**Cashew cream - 1 cup cashews, 1 lemon squeezed, 2 cloves of garlic, 1/2 cup of filtered water, a pinch of salt and blend on high speed for 2 mins. Refrigerate before serving.
